cupsLeeks--thinly sliced

ouncesGruyere cheese, shredded

tablespoonsflour unbleached

tablespoonsButter, light, Land o lakes

cupskim milk

teaspoonscanola oil
Steps
Sequence Step
1slice leeks into thin slices. sautee in oil until soft
2slice potatoes into 1/8-inch slices (about 3 cups) slice apples into 1/8-inch slices (about 3 cups)
3melt butter in small saucepan. still in flour cook for 3 minutes slowly add milk, stirring constantly cook until thick
4spray grain pan with cooking spray place a layer of potatoes in pan top with 1/3 of cooked leeks top with 1 cup of apple slices sprinkle with 1/3 of cheese pour 1/3 of sauce over vegetables
5repeat layering vegetables and sauce, topping with cheese can sprinkle 2 Tbl parmesan over top
6cover pan with foil bake 80 minutes at 325 degrees remove foil and bake 5 to 10 more minutes, until brown let stand 15 minutes before serving
