cupOatmeal Flour - or make your own by using old-fashioned rolled oats, ground into flour with a coffee grinder

container (8 oz)Fat Free Greek plain yogurt

Steps
Sequence Step
1Preheat Oven to 400 Degrees
2Place walnuts in a food processor to chop/grind
3Combine oatmeal flour, flax seed, baking powder, baking soda, and sea salt in a medium bowl; stir well with a whisk. Stir in walnuts. Make a well in the center of mixture.
4Combine honey, coconut oil, vanilla, yogurt and egg in a small bowl; add to the flour mixture stirring just until moist. Fold in diced pears.
5Spoon batter into 15 muffin cups coated with cooking spray; bake at 400 degrees for 18-20 minutes or until muffins spring back when touched lightly in the center. Remove from pans immediately and place on wire rack. Serve either warm or at room temperature.
