| 1 | Preheat oven 375. Coat 12 muffin tin with olive oil.
Combine vegtables in in big bowl.Fill each tin 2/3 full
Wisk egg and seasonings in large mixing bowl.
Use 1/3 measuring cup for egg mixture and pour slowly into each muffin tin.
Egg mix should fill rest of cup
Bake 30 min until muffins have risen and slightly brown.
Keep 1 week in frig or can freeze. |
