Recipe Description This is a 3 cheese perogie that is way better than store bought! They are a lot of work though so be sure to plan ahead!

Steps
Sequence Step
1Mix flour, water, egg, and salt together. Knead until dough is smooth, cover with bowl and let sit for 30 minutes.
2Peel and boil the potatoes until soft. Drain and place into bowl, cover with 8 ounces of cheese. Mash together with milk and set aside.
3Roll out on floured surface, about 1/8 inch thick. Using a glass or round cookie cutter, cut discs from dough and using leftover dough, keep rolling out until you''ve used all the dough or at least most of it.
4Place a spoonful of potato/cheese mixture into center of disc. Fold dough over mixture and press out air around mixture. Using a fork, press against edges to seal in mixture.
5Boil water and cook for 8 minutes and then drain. Heat butter in frying pan and fry until golden brown.
6Serve with sour cream, or saute some onions in butter and serve with onions.
