Steps
Sequence Step
1Rice cauliflower florets in the food processor, careful not to over process. 1 medium head should yield approximately 3 cups.
2Cook 3 c. riced cauliflower in microwave for 8-10 minutes. Turn cooked cauliflower out onto a dish towel and let cool a few minute. Gather the dish towel together and squeeze the water out of the cauliflower. This is very important. If you do not get enough water out, the recipe will not work. Squeeze until you can''t get any more water.
3In a bowl, combine squeezed cauliflower, egg, parmesan, monty jack cheese and spices. Work with hands to form into a doughy ball. (it will be a little loose, remember, this isn''t flour dough)
4Preheat oven to 375 degrees. Lay parchment paper out on a cookie sheet and spray with cooking spray. Place your "dough" ball on the cookie sheet and work into either a circle or rectangle shape. Keep at least 1/8 inch thick, I go closer to 1/4. If you press too hard you will create holes.
6Top with your favorite pre cooked pizza toppings and broil on high for a few minutes until bubbly and lightly brown.
