| 1 | Combine 1 1/2 cups of quinoa with 3 cups water in a medium saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until quinoa is tender, about 15 minutes.
Slice the peppers, carrots, and green onions.
Put the frozen edamame in the microwave for 3 minutes
Combine corn, edamame, peppers, carrots, and green onions in a bowl while the quinoa cooks.
After quinoa is cooked mix all ingredients together, then add balsamic vinegar and lemon juice |
