1 | Cook carrots, celery and onions in a pot with oil and cayenne pepper until slightly soft (approx. 4 mins) |
2 | Mix in quinoa,chicken broth and water; bring to a boil |
3 | Reduce heat and simmer for approx. 12 mins (until quinoa softens) |
4 | While soup base simmers sauté chicken until cooked through |
5 | Shred or cut chicken into bite sized pieces; add to soup base |
6 | Simmer until hot throughout (approx. 5 mins) |
7 | Season to taste (salt, pepper, your choice of other spices) |
8 | Optional: Garnish with slice of lemon and parsley |
9 | Enjoy |
