ounces1\" cubed bread (to make 6 cups)

cupchicken broth (10.5 ounce can)

Sequence Step
1MASHED POTATOES----Peel and cut potatoes. Boil until soft. Drain. Add 1 stick butter. Add milk. Using electric mixer, beat until creamy. COOL or can be done the night before.
2IN LARGE MIXING BOWL----Add mashed potatoes, bread cubes, chopped onion, chopped celery, chopped parsley. Mix together (I wear plastic gloves and mix by hand).
3Add salt and pepper, to taste. (OPTIONAL: Poultry seasoning can be added, if desired.) Mix in well.
4Add eggs. Mix well.
5Grease 9" x 13" pan. Add stuffing mix to pan. Spread out evenly. Poke 24 holes in it with your finger. Pour chicken broth into holes.
6Cover with aluminum foil.
7Bake in preheated 350-degree oven for 30 minutes. Uncover and bake for 15-30 more minutes (until lightly brown on edges).
