Sequence Step
1Heat 2 tbsp oil in a pan. Add paprika and shake. Don''t burn it. Add diced medium bacon. Saute for 3 minutes till the aroma changes. Add red bell pepper, diced onions, celery and cook for 3 minutes. Add diced jalapeño and garlic. Squeeze in the tomatoes. Heat for 4 minutes. Add the rice. Toast for some time. Adjust the heat so the mixture doesn''t turn. Moisten with white wine while scraping off the bottom. Add chicken stock. Keep scraping the bottom. Boil for a few minutes. Add 2 1/2 oz shrimp (Bay shrimp). Turn heat down to medium. Simmer for 10 minutes. Rice should be mostly cooked. Add some water and cooked smoked sausage. Cover and simmer 20 to 30 minutes on very low heat. Add the chicken and cook for 8 minutes. Add the shrimp. Cook for 10 minutes. Add 1 tsp tobacco. Add water to required consistency. Cover on heat for 3 minutes.
