| 1 | Mix 2 tbsp garlic powder, 1 tbsp onion powder, 1 ½ tsp oregano, 1 ½ tsp cumin powder, 1 ½ tsp pepper, 1 ½ tbsp salt in a bowl. Place 1 lb chicken in a bowl. Add 3 tbsp of the mixed spices. Add the juice of two limes. Mix well and leave for 15 minutes. Heat ¼ cup olive oil in a pan. Add 1 1/2 tsp annatto seeds. Strain the seeds once they have been heated. Warm the pan with the orange colored olive oil. Add the chicken pieces and fry till brown. Remove the chicken. Add 1 1/2 cup chopped onion and ½ cup cilantro, ¾ cup red bell pepper, 3/4 cup green pepper and 1 tsp fried garlic and stir. Add ¾ tsp salt, 3 bay leaves, chopped pieces of 2 chorizo, ½ cup chopped olives ¼ cup tomato paste. Mix. Add 3 more tbsp of spice mixture and the chicken pieces. Stir for 2 minutes in the heated pan. Add 4 cups rice and stir for 2 minutes. Add a bottle of beer and 5 cups of chicken broth. Stir and let it simmer. Cover and heat for 15 more minutes. Stir. |
