1Directions: Makes about two-dozen In large bowl, mix together the honey, applesauce, and eggs.
2In a separate bowl, combine the flour, baking powder, spices and baking soda.
3Add the flour mixture to the wet mixture, alternating with the tea; beat well.
4Ladle into greased cupcake pans a little more than half full. I use a ladle that measures 1.75 ounces. Do not use cupcake papers unless you can find tin ones because mixture is too liquid that it soaks into paper. Silicone cupcake cups are great for this no grease needed!
5Bake at 300° in 12 minute intervals swapping top rack and bottom rack every 12 minutes for a total cook time of 48 minutes. Cook times and Temp may need to be adjusted for your oven but final product will be somewhat moist in center due to applesauce, I have tried cooking longer to make them less moist in center and outer layer just ends up being too hard.
