| 1 | Beat eggs, with sweetener, oil and vanilla until pale and fluffy. Stir in dry ingredients. Fold in shredded zucchini and raisins. Pour into greased loaf pan and bake at 350 degrees for 60 minutes or until firm in center. Cool for 10 minutes in pan then turn out on rack. Freezes well. |
