Steps
Sequence Step
1Put cream into small saucepan and heat gently without boiling.
2Break up chocolate and add to cream. Stir as chocolate melts then remove from heat. Leave to cool.
3Seperate the eggs. Whisk the egg whites until stiff.
4Once the chocolate/cream has cooled and is nearly cold stir in the egg yolks. The cream must be cool so that the eggs do not cook when they are added. This step is optional - the egg yolks can be omitted if preferred.
5Add a spoon of the whisked egg whites to the chocolate mixture using a metal spoon to cut it in, then gently add the rest of the egg yolks.
6Pour the mixture into eight small ramekins, cover with cling film and leave to cool in the refrigerator for 24 hours.
7To serve - remove cling film, pour a small amount of the agave syrup over the surface of the mousse. The mousse will be quite bitter and the syrup will provide a tiny bit of sweetness with each mouthful.
