1Directions: Preheat the oven to 350 degrees F. In a large mixing bowl, cream together the butter, sugar, lemon extract and vanilla extract. Slowly add in the flour and salt until the mixture forms a dough. Mold the dough into a large ball, wrap it in wax paper and allow it to cool in the refrigerator for 30 minutes. After the dough has cooled, remove it from the wax paper and roll the dough out to a 1/4-inch thickness on a well floured surface. Use a round cookie cutter to cut out your cookies and place the cookies on an ungreased baking sheet. Bake the cookies at 350 degrees F for 25-30 minutes until the edges just begin to brown. Remove the cookies from the baking sheet and allow them to cool completely. Make the icing by whisking together the powdered sugar, milk, lemon extract and food coloring (optional). Once the cookies have cooled, drizzle them with the icing. Place the cookies in the refrigerator for 15 minutes to allow the icing to set.
