Recipe Description Very moist and flavorful recipe. Great way to deal with various veggies in the frig. Turns out great no matter which combo's you come up with.

cupBread crumbs or crushed cornflakes

medium (2-1/2\" dia)Onion, chopped

tablespoonsWorcestershire sauce

cupsRotel - diced tomatoes & Green chilies, mild or original - 1 can

Steps
Sequence Step
1Combine all ingredients until well blended.
2Split into loaf pans or muffin tins or however you choose to bake your meatloafs.
3Bake until internal temperature reaches 160 degrees. This usually takes 45 minutes at 375. Remove from oven and let temperature raise to 165 degrees before serving.
4Make topping by combining 4 tablespoons balsamic vinegar, 4 tablespoons brown sugar and 1/2 cup ketchup. Bring to boil and then simmer until somewhat reduced. Pour over the tops of your meatloaf.
