| 1 | In a medium bowl whisk the eggs. Slice the mushrooms and chop the olives. Heat a medium skillet over medium heat. Melt the clarified butter. | 2 | Pour the eggs into the heated skillet. Add the mushrooms, olives, and spinach. Cover skillet and cook for 5 to 10 minutes. Slide the omelet out of the pan folding it over onto a plate. Season with salt. |
