| 1 | Bake potatoes in 350 degree oven for approx, 50-60 min. | 2 | Bake chicken in same oven for approx 25 min. | 3 | Combine spices, olive oil and lime juice in a bowl and set aside. | 4 | Shred chicken. | 5 | Wilt spinach and kale in a skillet over medium heat, add shredded chicken. | 6 | Slice Potatoes in half and scoop out about half of the inside. Brush with seasoning mixture. | 7 | Bake skins in 400 degree oven for 5-10 min til nice and crisp. | 8 | Mix remaining seasoning mixture with the spinach, chicken and kale. | 9 | Fill skins with mixture, top with cheese, and bake til Cheese is melted. |
