| 1 | Preheat oven to 325. Mix dry ingredients and set aside. | 2 | Mix eggs, oil and bananas and vanilla well and then add dry ingredients in stages. | 3 | Spray 1/2 hotel sheet pan (to get more yummy top) or two loaf pans. | 4 | Make sure batter is mixed well and pour into prepared pans.
If using a sheet pan, it cooks quickly (about 25 minutes) and forms more of a bar shape (although still quick bread consistency). If using a loaf pan, plan on closer to 45 minutes or more. | 5 | Cool and cut into bars (sheet) or slices (loaf pans). |
