tablespoonsoy sauce, lite, (shoyu)- low sodium

cup, chopped or dicedBroccoli, raw

tablespoonsgreen pepper, finely chopped
Steps
Sequence Step
1Finely slice onion and mushrooms
2Chop the broccoli into small pieces
3grate the zucchini and the carrots
4cook the rice according the package directions if you don''t have left over rice.
5Pour a small amount 1 T or less of vegetable oil into your wok or deep fry pan, heat until you see steam rising from the oil
6Turn down the heat a bit so as to not burn the oil and add onions, garlic, and mushrooms, you can add a small amount of green pepper at this time as well
7Cook until the onions start to become clear
8then add the remaining vegetables, except the spinach
9Cook and stir for approximately 3-4 minutes, do not let the vegetables become overcooked
10Push the ingredients up the sides of the pan or wok to create a well in the center. Add a tablespoon or less of oil and increase the heat again.
11add the cooked rice and stir until well incorporated with the vegetables
12create a well again and add 1 Tablespoon or less of oil
13crack 1-2 eggs in the well and scramble (keeping the egg in the well)
14once the eggs are scrambled and cooked stir to incorporate them into the rice and veg
15add at least 3 tablespoons of soy sauce, I use low sodium.
16Stir well to distribute the soy sauce.
