Steps
Sequence Step
1Preheat oven to 350°F. Grease an 8"x8" baking dish, then line with parchment paper.
2Mix strawberries, lemon juice, and vanilla extract in a small bowl. Let sit while you make the oat base.
3In food processor add oats, almond butter, butter, brown sugar, baking soda, vanilla extract, and salt. Pulse until there aren''t any whole oats but it''s still coarser than flour.
4Put 2/3 of the mixture into the prepared baking dish and press it into an even layer. Discard any juice from the strawberries, toss them with cornstarch, then gently press them evenly into the oat base. Crumble the rest of the oat base on top, gently press into the strawberries, and sprinkle the almonds on top.
5Bake for 35-45 minutes, or until the top and edges start looking golden brown. Let cool completely before cutting into 9 bars. Store in the fridge to help keep their shape.
