1Preheat oven to 325. Grease an 8X10 pan and line with parchment paper that overhangs 2 inches opposite sides of the pan. Set the pan aside. In a large bowl place the oats, oat flour, brown sugar, ground cinnamon and salt and whisk to combine, breaking up any lumps in the brown sugar. Add chopped nuts, coconut, and chocolate chips (chopped) and any dried fruit. Combine. In a separate bowl place the melted coconut oil, honey/ syrup and molasses, egg and vanilla and mix well. Create a well in the dry ingredients, pour in the wet ingredients and mix to combine. Press firmly into prepared pan in an even layer. Place pan in the center of oven and bake, rotating once during baking. Bake until golden brown all over. About 25 minutes. Allow to cool about 10 minutes then transfer pan to the freezer for 30 minutes. Lift bars out of the pan by the overhanging parchment. Slice into rectangles with a sharp knife. Store in refrigerator for a week or freezer for longer.
