| 1 | In a large mixing bowl combine mashed bananas, eggs, egg white, sugar, ground flax, canola oil, vanilla, and salt. | 2 | In a microwave safe bowl or measuring cup, place 1 tsp vinegar in cup. Fill cup with milk to make total of 1/2 cup 2 Tablespoons in the cup. Microwave for 30 seconds until milk curdles. | 3 | Dissolve baking soda in the soured milk. Add combination to mixing bowl and mix well. | 4 | Add flours and cinnamon to mixing bowl. Blend well by hand. | 5 | Pour into 2 greased loaf pans. | 6 | Bake at 325 for 1 hr 10-20 minutes. | 7 | Also makes 24 muffins. Bake at 325 for 25-30 minutes. |
