The pumpkin replaces the butter and milk, so this is very low in fat and healthier for you! The pumpkin also makes this a creamier delicious dish. It's very fast and easy to prepare!

The vegetables and green chili sauce are delicious together! And so healthy! You can add other vegs,if you want. You can use whatever squash you like. I've used Spaghetti Squash and Butternut Squash. Yum! (The Prep and cook times do not include the time it takes to bake squash, as that varies with size and variety.)
