| 1 | Preheat oven to 350F. Spray an 8 or 9" square baking pan with vegetable oil spray. | 2 | In a medium bowl, stir together apples and sugar; let stand for 10 minutes. | 3 | In a large bowl, stir together flour, optional cocoa powder, cinnamon, baking powder, baking soda, and salt. | 4 | In a medium bowl, stir together remaining ingredients except icing sugar. | 5 | Stir apple mixture into flour mixture. | 6 | Add coff mixture, stirring until blended. | 7 | Pour batter into pan. Bake for 20 to 25 minutes, or until a toothpick inserted in center comes out clean. | 8 | Let cool on a rack for about 30 minutes. To serve, remove pan and dust with icing or confectioners'' sugar and cut into squares. |
