| 1 | Heat oil in a large nonstick frying pan. Add all chopped vegetables through garlic cloves. Saute until soft--about 5 minutes. Add beans, seasonings, red wine vinegar and broth. Cover and simmer gently, about 10 minutes to heat through and infuse spices. Remove the lid and continue to simmer a brief time to reduce liquid. |
