Recipe Description I actually eat this as a main course but I didn't want to put it down as pasta. If you haven't tried Quinoa you should. It is so good for you with 22 grams of protein in only a cup of it. It truly is the 'miracle grain'. I eat this either hot or cold. Its delicious both ways.

cupblack beans, organic, drained and rinsed

Steps
Sequence Step
1Heat the oil in a medium saucepan over medium heat. Sir in onion and cook until brown. Add the garlic saute until tender.
2Mix the quinoa into the sauce pan and cover with the chicken broth. Season with cumin, cayenne and salt and pepper.
3Brin the mixture to a boil. Cover, reduce heat, and simmer 20 minutes.
4Stir in corn and peas. Continue to simmer for about 5 minutes. Mix in the black beans and parsley.
