I got the base of this recipe from Women's Health Mag. But quite frankly it was dry and hard as a brick. This is the improved edible version of it. Its quite filling and delicious! It makes 9 large muffins

I actually eat this as a main course but I didn't want to put it down as pasta. If you haven't tried Quinoa you should. It is so good for you with 22 grams of protein in only a cup of it. It truly is the 'miracle grain'.
I eat this either hot or cold. Its delicious both ways.
