1Baby Bok Choy can be found in any Asian market. Overall length should be 3'' or less
2Rinse well to remove the sandy soil
3With use of a cutting board slice off about a 1/4 inch of the bottom
4Place in a large container and cover with cold water
5Let it sit for at least 30 minutes. It will hydrate and grow larger
6Prepare a large skillet or Wok with some olive oil
7Add several cloves of fresh garlic, sliced
8When garlic just starts to brown, pull double hand full of Baby Bok Choy from the bowl and shake off excess water and drop into the skillet
9Salt and immediately stir
10Continue to drop in batches of Baby Bok Choy and stir until leaves turn a dark green. This will only take a couple of minutes. If the white turns translucnet it is over cooked.
11Pull the pan from the heat and let sit for a couple of minutes and serve warm.
12Goes very well with pork and lamb dishes
