cupolive oil, extra virgin

tablespoonpeanut butter

tablespoonTruvia/Stevia(or sub. of choice) sugar free honey

teaspoonvanilla extract
Steps
Sequence Step
1Preheat oven to 350 Fahrenheit; Prepare a sheet pan with parchment paper (or a Silpat or aluminum foil).
2Combine dry ingredients in a large bowl and mix together until well combined.
3In a small saucepan, combine oils, honey substitute, and peanut butter over low heat and stir until smooth, melted, and well mixed.
4Remove from heat and add vanilla, stirring well.
5Allow to cool a bit, then pour over oats and stir well with a large wooden spoon until oats are all moistened.
6Spread granola into a moderately thin single layer on the prepared sheet pan and press down a bit (to create clumps).
7Put granola on the middle rack of preheated oven and bake for 10-15 minutes.
8Check frequently to ensure the granola doesn''t burn - the coconut can go from done to burned very quickly.
9Remove from oven and allow to cool. If you''d like it to clump as much as possible, allow to cool completely. If you prefer less clumping, break the granola up while still warm. Store in an airtight container. Good for about 2 weeks.
