1 | Baby Bok Choy can be found in any Asian market.
Overall length should be 3'' or less |
2 | Rinse well to remove the sandy soil |
3 | With use of a cutting board slice off about a 1/4 inch of the bottom |
4 | Place in a large container and cover with cold water |
5 | Let it sit for at least 30 minutes. It will hydrate and grow larger |
6 | Prepare a large skillet or Wok with some olive oil |
7 | Add several cloves of fresh garlic, sliced |
8 | When garlic just starts to brown, pull double hand full of Baby Bok Choy from the bowl and shake off excess water and drop into the skillet |
9 | Salt and immediately stir |
10 | Continue to drop in batches of Baby Bok Choy and stir until leaves turn a dark green. This will only take a couple of minutes. If the white turns translucnet it is over cooked. |
11 | Pull the pan from the heat and let sit for a couple of minutes and serve warm. |
12 | Goes very well with pork and lamb dishes |
