1 | separate the eggs |
2 | add sugar to the yolks and wisk |
3 | melt the chocolate in a double boiler over low heat |
4 | temper the eggs with the chocolate then mix. if chocolate is to hot it will scramble the eggs. |
5 | place egg whites in bowl and mix add cream of tarter during the mixing process and then stop when they form peaks. |
6 | fold chocolate into the whites and place in bundt pan or individual cake forms (12, simular to the muffin pan. |
7 | if making a cake, 20-23 minutes to bake. The top will crack and toothpick will pull out with crumbs.
If making individual cakes 13-15 minutes, watch the tops. Bake at 350 degrees. |
8 | to finish dust with powder sugar when cooled or cover with a chocolate granche. |
