Recipe Description Mille Crêpe is a famous kind of crepe native from France. It is consists of many layers of crepes, indeed, from the name itself, “mille” means thousands or layers of crepes. Crepes are an extremely thin type of pancake made out of wheat flour. They came from the Brittany region of northwestern France. Crepes are considered to be the French national dish, though they are popular in many other countries around the world as well. They are often served with fruits (especially bananas and berries), syrup, whipped cream or lemon cream. Crepes are rich in protein which keeps our body strong from our difficult physical activity and exertion. In this project, mille crêpe is being combined with a touch of Filipino taste for having purple yam or “ube” as the filling because yams are a good source of vitamin B6 which is needed by the body to break down a substance called homocysteine that directly damage blood vessel walls. Mille Crepe

Sequence Step
1Mix all the ingredients well.
2Then, put the crepe batter to a container and chilled overnight.
3Then the next day assemble all the mixtures. Cook the crepes. Lay 1 crepe to a plate and put first the vanilla pastry cream and then lay again i crepe then the ube jam as you do it vice versa making layered crepes.
4Make an icing by combining powdered sugar with milk and cream cheese. Then, spread it to the top of the crepes and design. Voila!




Vanilla Pastry Cream
Ingredients

tablespoonsCornstarch

tablespoonsButter, light, Land o lakes

Steps
Sequence Step
1Put 4 cups of milk to a pan and let it boil. When it begins to boil, continue on stirring it.
2To a medium bowl, put 6 egg yolks with the vanilla extract, Splenda and cornstarch.
3Mix all the ingredients in the bowl then pour the cream to the hot milk and continue on stirring slowly in a medium heat.
4When the cream thickens, prepare a bowl with ice for the ice bath and a container.
5Put the pan to an ice bath as you continue on mixing the cream until the temperature lowers. Add the butter and mix again. Transfer the cream to a container and let it chill overnight.
6The next day, add the heavy cream to the cream and whisk.




Sugar-Free Purple Yam Jam

Steps
Sequence Step
1Mix all the ingredients except the heavy cream.
2Put the mixture to a pan and continue on stirring in medium heat until it thickens.
3Chill it overnight. Then, the next day mix the heavy cream with the jam.
