Vegetable Salmon Tortilla
Ingredients

cupsBroccoli slaw

cup, shreddedred cabbage

cup, choppedred sweet pepper

cup, choppedyellow sweet pepper

cup, gratedCarrots

cups, shreddedcolby cheese

tortillas (approx 10" dia)Tortillas, whole-wheat
Steps
Sequence Step
1Preheat over to 250.
2Place olive oil in a heated pan.
3Cook vegetables until they are sauted.
4Add salmon and remove from heat.
5Place tortillas on cookie tray and preheat in oven.
6Place some cheese on one side of each tortilla.
7Put half of the sauted mixture onto the cheese.
8Put the remaining cheese on the top and fold over the tortilla.
9Bake until cheese is melted.
10Cool for a few minutes and cut in half and serve.
