Recipe Description This is a modification of another recipe that I had come across. I wanted to grind my own grain, no milk and no sugar.

cup (not packed)cottage cheese, 2%

packet (0.5 oz)Truvia, Stevia (or sugar sub. of choice)

11. Add the Kamut grains and Wheatberries to a grinder or Vitamix and grind for approximately 1 min. Check that the texture is smooth. It can have some granules to it.
22. In a blender, blend on medium or high water, cottage cheese and vinegar.
33. Add the egg whites to the water, cottage cheese and vinegar. Blend until mixed
44. Sift flour into a separate, large bowl; stir in baking powder, baking soda,sweetener and salt.
55. Add blender mixture to flour mixture; blend until smooth.
66. Cook on a lightly greased waffle iron until golden brown; lift off with a fork.
