Recipe Description Found this on a blog. It's quick and easy, tastes great. I cubed the chicken instead of shredding and used turkey bacon instead of pork. I also added 1 can of whole diced tomatoes and 1 T of half and half.

Creamy Tomato Soup with Corn, Chicken and Bacon

ounces3 cans diced tomatoes (14.5 ounce can)

cupcorn (7 oz can Green Giant Mexicorn)

breasts, bone and skin removedchicken breast, cubed

medium slices (packed 20/lb)bacon (4 strips of turkey bacon)
Steps
Sequence Step
1Place onion, garlic and 2 cans diced tomatoes in food processor and blend until smooth. Transfer to a large saucepan over medium-low heat.
2Add corn, stirring to combine, then add salt, pepper, cumin stirring to combine.
3Stir in buttermilk and 1 T of half and half, if desired) and remaining can of diecd tomatoes, along with cubed chicken breast and turkey bacon.
4Reduce heat to low and let simmer for 10-15 minutes. Serve inside hollowed out bread bowls, if desired.
