Recipe Description Once you start making your own salad dressing, you’ll never go back— you’ll see better results for less money. This salad features a berry vinaigrette and could easily become a meal with the addition of chicken, fish, or tofu and a side of crusty, whole-grain bread.

bulbFennel, thinly sliced

fruit (2-5/8" dia)orange, supremed and chopped

cup, choppedwalnut halves, roughly chopped

cup, thawedfrozen berries

cupolive oil

tablespoonsred wine vinegar
Steps
Sequence Step
1Blend or mash berries and strain seeds (or leave in for extra crunch). Whisk together with remaining vinaigrette ingredients. Supreme orange by slicing off ends to expose the pulp, then cut off the rind along the curve of the fruit. Remove sections from membrane with knife. Toss salad ingredients in large bowl, add vinaigrette and toss gently. Garnish with fennel fronds and serve immediately.
