Recipe Description These muffins are great for breakfast or a healthy snack. The apple replaces some of the fat, and the whole grains give you fiber and nutrition that can't be beat!

2Preheat oven to 400 degrees, and spray a 12-serving muffin tin with non-stick cooking spray.
3Grate the apple (with skins on). In a small bowl, add apples, 1 Tbsp of the cinnamon, and the brown sugar. Stir until combined and set aside.
4In a large bowl, combine the flours(2/3 C of each), baking powder, 1/2 Tbsp of cinnamon, and salt. Stir well with a wire wisk, until well blended. Add 2/3 C. granola, and stir until well blended. Make a well (dig a hole) in the center of the dry ingredients.
5In a medium bowl or Quart-sized measuring cup, combine the egg, milk, vanilla, and oil. Stir until well blended. Add the apple mixture and stir until combined.
6Pour the wet ingredients into the well you created in the dry ingredients. Stir (gently) just until combined. There will be some lumps. Stirring too much will make the muffins tough.
7Fill muffin cups 2/3 full. Sprinkle a little granola on top of each one.
8Bake at 400 degrees for about 18-22 minutes or until muffins are set.
