| 1 | Heat oil in a large skillet over medium-high heat. Season steak with salt and pepper. Add to skillet and brown nicely on both sides. Remove from skillet and set aside. | 2 | In same skillet, saute onion and celery until onion is translucent but not browned. Add garlic and saute another 30 seconds. | 3 | Add beef broth, tomatoes, soup mix and parsley. Blend. Return meat to skillet, cover and simmer about 30 minutes or until tomatoes have cooked down and meat is tender. | 4 | Remove meat to serving dish. Thicken gravy with cornstarch mixture and pour over meat or serve in a gravy boat with meat. |
