cups (8 fl oz)beef broth, low sodium

largeOnion, chopped

cups, choppedcarrot,chopped

cuppearl barley

cupsLima beans, frozen

tablespoonoregano, dried

tablespoonthyme, dry, ground
1
poundleg of lamb, roasted (leftover is perfect)

dashpepper, to taste

dashsalt, to taste
Steps
Sequence Step
1Add beef broth to a large stock pot and bring to a low boil
2Add onions, carrots, celery, and barley
3Bring soup to a boil, reduce heat and simmer for 60 minutes
4Take about 1/2 broth from pot and add cornstarch. Whisk well to eliminate any lumps and add back to soup pot.
5Add oregano, thyme, lima beans, and lamb to soup pot.
6Return soup to a low boil, reduce heat, and simmer for another 20-30 minutes.
7Add salt and pepper to taste
