medium (2-3/4" dia) (approx 3 per lb)apples, peeled, cored and diced

cupsunflower seed kernels, toasted

teaspooncinnamon, ground
Steps
Sequence Step
1Preheat oven to 400 degrees F.
2Prepare 12 2.5 inch muffin cups.
3In small bowl, combine oatmeal and milk. Stir.
4In medium bowl, combine flour, flaxseed meal,baking powder, salt, cinnamon and sunflower seeds.
5Pare and core apple. Dice into small pieces and toss in dry mixture from step 4.
6In mixer bowl, beat egg and add brown sugar and oil; beat until blended.
7Add wet mixture to dry mixture all at once and stir until just moistened. Spoon into prepared muffin cups about 3/4 full. Bake a full 20 to 25 minutes, until golden.
8Immediately remove from pan to wire rack. Serve warm.
