Ingredients
Amt. Measure Ingredient
2
cupsflaxseed meal
3
teaspoonsbaking powder (1 Tablespoon)
1
teaspoonsalt
2
tablespoonssugar
5
extra largeeggs, beaten
1/2
cupwhole milk
1/3
cupOil,vegetable
Steps
Sequence Step
1Preheat oven to 350 F. Prepare pan (a cookie sheet with sides is wot i use) with oiled parchment paper or a silicone mat. Flaxmeal is VERY sticky and will be hard to remove if the pan is not lined.
2Mix dry ingredients well -- a whisk works well.
3Beat eggs. Add wet to dry, and combine well. Make sure there aren''t obvious strings of egg white hanging out in the batter.
4Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it''s easy to spread.)
5Pour batter onto pan. spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (i go all the way to the edge, but it will be thinner).
6Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is. i start checking at 15 minutes.
7Cool and cut into whatever size slices you want. i have found that on a cookie sheet, 4 x 3 works well for toasting and sandwiches.
