cups (1" cubes)raw pumpkin (boiled in unsalted water)

Steps
Sequence Step
1Puree 1/2 black beans and 1/2 pumpkin along with the tomatoes and 1-2 cups of vegetable broth until smooth. Set aside.
2Melt butter in a large soup pot over medium heat. Add the onion and garlic and saute. Season with salt, pepper and cumin.
3When onions are softened, add chipotles and cilantro and cook for just another minute.
4Add bean/pumpkin puree mixture, remaining beans, pumpkin, meatless crumbles (use soy chorizo if available), and remaining vegetable broth. Mix well until blended.
5Bring to a slight boil, reduce heat and simmer for about 25 minutes or until well thickened.
