cupall-purpose flour

cupwheat flour, wholewheat

teaspoonbaking soda

teaspoonbaking powder

cupblueberries, fresh

small (2-1/2" dia) (approx 4 per lb)apple (finely chopped)
Steps
Sequence Step
1Preheat oven to 375 degrees
2Spray muffin tin with cooking spray
3Mix wheat bran with soymilk and let stand for 10 minutes.
4Meanwhile, in a large bowl, mix together applesauce, egg beater, brown sugar, and vanilla.
5Beat in bran mixture.
6Sift together, the two flours, baking soda, baking powder, and salt.
7Stir dry ingredients into bran mixture until just blended. Fold in blueberries and chopped apple.
8Scoop into muffin cups.
9Bake in preheated oven for 15-20 minutes, or until tops spring back when lightly tapped.
