Steps
Sequence Step
1Bring 3 quarts of water to a boil.
2Meanwhile, whisks together bragg''s, sugar, sesame oil, cornstarch and vinegar until smooth. Set aside.
3When water boils, add soba noodles and cook for 8-10 minutes, until al dente.
4While noodles are cooking, warm oil in a non-stick skillet. Saute chicken until almost done. Add garlic and cayenne and cook, stirring constantly, just until garlic turns golden (a minute or less). Stir in broccoli, water, and wine. Cover and cook for 3-4 minutes until the florets are tender but still bright green. Thoroughly stir in the grated carrots and the reserved soy sauce mixture. Cook for a minute or two until the liquid thickens, then reduce the heat to low.
5When the noodles are done, drain, rinse them with warm water, and drain again. Ad the cooked noodles to the chicken and vegetable mixture and stir until they are coated with the sauce.
