cupdried split peas (boiled, drained, without salt)

cupschicken broth, fat free, low sodium

tablespoonsbutter

medium (2-1/2" dia)Onion, chopped

cups (1" cubes)raw pumpkin (chopped)

medium whole (2-3/5" dia)Tomatoes (chopped)

teaspoondried tarragon

teaspoonSpices, ground cumin

tablespooncilantro, fresh, chopped

teaspooncayenne pepper DASH

teaspoonscayenne pepper DASH
Steps
Sequence Step
1Melt butter and saute the onions until soft.
2Add the pumpkin, tomatoes, tarragon, cumin, cilantro and cayenne pepper. Bring to a boil over high heat.
3Stir the vegetable mixture into the cooked split peas. Add the chicken stock. Bring to a boil. Reduce heat and simmer for 20 minutes, or until the vegetables are tender. Add more stock as needed to get the consistency you desire.
