cup (1" cubes)raw pumpkin (boiled and pureed to 3/4 cups)

Steps
Sequence Step
1Preheat oven to 400 degrees.
2Prepare muffin tray with cooking spray
3In large bowl, sift together flour, baking powder, salt, and cinnamon. Whirl the oats in a blender until the are the consistency of cornmeal and add to the flour mixture. Set bowl aside.
4In another bowl, lightly beat egg and egg white. Stir in pumpkin puree, milk, pineapple juice, oil, and brown sugar. Fold wet ingredients into dry ingredients until just combined.
5Spoon batter into prepared muffin tray. Bake for 20-25 minutes.
