Sweet Potato Melt in your mouth Pancakes

Recipe Description Make these pancakes into little medallions or regular 4 inch pancakes. Whatever which way they have a tender crust, are light, and practically melt in your mouth. Top with some coconut butter frosting or your own version of powdered sugar.

Ingredients

teaspooncinnamon, ground

cupsplenda no-calorie sweetener (packets, not teaspoons)
Steps
Sequence Step
1In large bowl mash sweet potato til creamy
2Add egg whites and whisk til frothy
3In separate bowl whisk together all dry ingredients
4Slowly add to wet ingredients and continue whisking until incorporated
5Add banana flavoring. If you don''t have banana flavoring add vanilla
6Add banana flavoring. If you don''t have banana flavoring add vanilla
7You can also add 1/4 cup of banana but the results will not be Melt In Your Mouth as much, and you will need to add 12.85 grams of carbs
8Grease non stick skillet with coconut oil
9Warm skillet on medium heat
10Warm on medium heat
11Drop by Tbsp onto skillet.
12Drop by Tbsp onto skillet.
13When a few bubble appear flip the pancakes.
14Cook on other side for about 30 seconds
15Have plate ready because they cook very quickly.
16Stack em up and drizzle with cinnamon and coconut butter or ''confectioners sugar'' made with Splenda in the coffee grinder.
17Makes approximately 18 dollar size pancakes that will melt in your mouth!
