1 | Whisk all wet ingredients together in bowl, EXCEPT water |
2 | Mix all dry ingredients together with fork in another bowl |
3 | Add warm water one tbsp at a time to dry ingredients until mixture starts forming ball. Continue to mix adding more water as needed until mixture resembles cream like texture. |
4 | Whisk the protein mixture into the egg mixture until combined |
5 | Divide evenly into 4 silicone muffin cups. Best results will result with silicone cups |
6 | Bake at 350 for 12 minutes or until tops are puffy and golden brown. Be careful not to over bake. |
7 | Remove immediately from oven. Let sit for 1 minute, then remove from muffin cups |
8 | Frost with coconut butter. |
9 | Adding 1.5 tsp of coconut butter or oil for frosting will add approx. 7 grams of fat and make this a great ULC treat meal for carbnite |
10 | Nutritional information included the coconut butter frosting |
11 | You can experiment and add different extracts and oils instead of banana. I like to use raspberry,coconut, lemon, chocolate for example. Using extracts that are pure oils keep the carb value low while adding great taste. |
