Recipe Description This is a very light and slightly sweet popover muffin that is Ultra Low Carb. Great for using on the Carbnite Solution Diet

ounceMuscle max protein powder vanilla (2 1/4 cups; 1/2 chocolate, 1/2 vanilla)

Steps
Sequence Step
1Whisk all wet ingredients together in bowl, EXCEPT water
2Mix all dry ingredients together with fork in another bowl
3Add warm water one tbsp at a time to dry ingredients until mixture starts forming ball. Continue to mix adding more water as needed until mixture resembles cream like texture.
4Whisk the protein mixture into the egg mixture until combined
5Divide evenly into 4 silicone muffin cups. Best results will result with silicone cups
6Bake at 350 for 12 minutes or until tops are puffy and golden brown. Be careful not to over bake.
7Remove immediately from oven. Let sit for 1 minute, then remove from muffin cups
8Frost with coconut butter.
9Adding 1.5 tsp of coconut butter or oil for frosting will add approx. 7 grams of fat and make this a great ULC treat meal for carbnite
10Nutritional information included the coconut butter frosting
11You can experiment and add different extracts and oils instead of banana. I like to use raspberry,coconut, lemon, chocolate for example. Using extracts that are pure oils keep the carb value low while adding great taste.
