Recipe Description I have been asked by many customers to come up with some healthy versions of traditional foods. But since fat, salt, sugar and flavors are the main carriers of flavor, when you reduce any one, you have to compensate somewhere else. This recipe is the answer to that challenge =)

Steps
Sequence Step
1Preheat oven to 350 degrees.
3Combine flours, baking soda, cinnamon, cloves and nutmeg in a large bowl and stir with a whisk to mix.
4In a small bowl add the pineapple juice, raisins, cranberry blend together and allow to soak 10 minutes to soften fruits.
5In another bowl, beat egg whites until soft peaks form.
6Beat in sugar slowly, followed by the applesauce, pineapple, buttermilk (milk
8Add the carrot/dry mix to the sugar/egg mix and blend lightly.
9Stir in the cranberry blend/raisins/pecans mix.
10Pour batter into baking pan and bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
10When I made it, it took 38 minutes. Cool on a wire rack before frosting. Transfer to a serving tray at least 10X12
11Beat cream cheeses together with lemon juice and vanilla.
12Add in powdered sugar until desired consistency.
13Spread over cooled cake.
14Using a plastic bag or decorating kit, place icing carrots evenly in 32 sections or in 16 sections if you prefer Cut cake into 16 squares.
15Chill remaining mix as since there is less fat and sugar, this will mold or turn bad more quickly than regular carrot cake!
