Steps
Sequence Step
1Preheat oven to 300°F
2In an oven-safe skillet over medium heat, sauté the beef until fully cooked and the color is brown throughout (approximately 10-12 minutes). Drain and set aside. Lightly coat the same skillet with cooking spray and sauté the onions until soft. Transfer the beef back into the skillet. Add the lemon rind and juice, tomato paste, yogurt, curry powder and salt. Combine well, then pack down tightly leaving an even surface. Remove the skillet from the heat.
3In a blender, combine the egg, egg whites and milk and mix on medium speed for approximately 5 seconds. Pour the egg mixture over the beef. Carefully place the skillet in the oven and bake until the eggs are stiff and golden brown (approximately 15-20 minutes).
